The Gehl-Mittelsted Farmstead is located in the far southern part of Carver County, in San Francisco Township. One of Carver County's many historic properties, the farmstead was placed on Minnesota's Ten Most Endangered Historic Sites list in 2006.

The history of Coney Island as a resort begins when Josephine Hassenstab sold the 31.85-acre island to Lambert Naegele in March, 1884, for $5,200. While Waconia already had several hotels such as the North Star, Lake House, and the Sherman House, the Coney Island Hotel and its resort became the most popular of all of Waconia's hotels and contributed to the town's status as a favorite summer resort.

In 1854, a group of Methodist ministers founded Hamline University in Red Wing. It was the first college established in Minnesota Territory.

Bongards' Creameries began as a small local creamery, helping farmers to process their milk. Since its beginning in 1908, it has grown to include satellite factories in Perham and Humboldt, Tennessee. It has also increased its range of products to include cheese and whey. In the twenty-first century, Bongards' Creameries is among the largest cheese-making plants in the world.

The city of Carver has a long and rich history as one of the earliest communities in Carver County. Located on the Minnesota River, it was often the first place immigrants to Carver County visited. From there, they spread out to other towns and farms.

Ghost towns convey a certain image, thanks to popular culture. Despite this portrayal, ghost towns are simply former towns, places settled and then abandoned for a variety of reasons. Every state in the United States has them and they are part of the history of a region, including Carver County.

The University of Minnesota Landscape Arboretum is the state's largest, most diverse and complete horticultural site. The grounds have more than five thousand types of plants, including fruits, vegetables, bushes and flowers. Located about twenty miles west of the Twin Cities, it is a significant horticultural resource.

Carver County, founded in 1855, is home to the Minnesota and Crow Rivers, along with 125 lakes. Located southwest of the Twin Cities, it is part of the seven-county metro area.

In 1873, George Rodgers led immigrants from southwest England to establish the Yeovil Colony in the Red River Valley on land purchased from the Northern Pacific Railroad. Despite high hopes, the settlement of New Yeovil crumbled soon after it began.

From 1615 until 1821, Lake Superior was known as "the Great Crossroads" of the western fur trade. The north shore of the lake harbored the major water routes to the western interior of North America. The British inherited the Lake Superior region from the French after the French and Indian War. In the later decades of the eighteenth century, the British North West Company controlled the Lake Superior fur trade. The North West Company was founded in 1779 by Scottish businessmen in Montreal.
