Libraries have been a part of Carver County history since the county was started. The earliest library began in 1858, and many more followed. In the twenty-first century, there are five full libraries and three express library branches. Total circulation is over one million books per year and rising.

The Gehl-Mittelsted Farmstead is located in the far southern part of Carver County, in San Francisco Township. One of Carver County's many historic properties, the farmstead was placed on Minnesota's Ten Most Endangered Historic Sites list in 2006.

The history of Coney Island as a resort begins when Josephine Hassenstab sold the 31.85-acre island to Lambert Naegele in March, 1884, for $5,200. While Waconia already had several hotels such as the North Star, Lake House, and the Sherman House, the Coney Island Hotel and its resort became the most popular of all of Waconia's hotels and contributed to the town's status as a favorite summer resort.

County resident O.D. Sell founded the Carver County Historical Society (CCHS) in 1940. The original task was to collect and preserve the history of Carver County and Minnesota. He had a large personal collection of objects relating to the county's history that he wanted to share with the public. This forms the core of the CCHS collection.

The Carver County Fair has a long and rich history, dating back to 1868. On July 20, the Carver County Agricultural Society formed in Chaska. Later that year, on October 10, this group held the first Carver County fair in Chaska, to display their crops and animals. An elected Board of Directors planned the fair. Despite later battles over location, the fair has been held almost every year since.

Bongards' Creameries began as a small local creamery, helping farmers to process their milk. Since its beginning in 1908, it has grown to include satellite factories in Perham and Humboldt, Tennessee. It has also increased its range of products to include cheese and whey. In the twenty-first century, Bongards' Creameries is among the largest cheese-making plants in the world.

When 3M began doing business in 1902, it made sandpaper. Soon the sandpaper company invented a line of products that changed household life around the world. 3M's Scotch-brand masking tape and cellophane tape were small inventions that started a consumer revolution.

From November 1944 to late October 1945, Dr. Ancel Keys paid close attention to hunger. He supervised thirty-six young male volunteers in a "starvation experiment," funded by the U.S. Army. This landmark effort at the University of Minnesota led to broad new understandings of nutrition and health.

Part of a Danish settlement near Tyler, the Danebod church and folk school have been a center of Danish American life for over a century. Danebod is a Danish word meaning "one who mends or saves the Danes." The Danebod community is home to programs that preserve, teach, and celebrate Danish American culture on the Minnesota prairie.

When George D. Munsing came to Minnesota in 1886 to produce a new line of woolen union suits, he founded an underwear empire. While selling everything from long johns to girdles, the Minnesota company urged generations of consumers, "don't say Underwear, say Munsingwear."
